Philosophy
Every region of France had its knife. We make the Basque Country's, by hand, as the shepherds did.
History
2004. Christophe Bury founds the Atelier du Couteau Basque in Bidart, on the Basque coast. He collaborated on "L'Almanach du Couteau," a reference work.
Knives handmade in the Pyrenean tradition. Two-nail folding system from Basque and Béarnais shepherds. Handles in local wood, horn, bone. Forged steel blades.
The workshop houses a museum: over 1,000 regional French folding knives from the 18th century onward. Each knife numbered and signed.
