History

Nils Wessell founded Brooklyn Butcher Blocks in 2010 with one obsession: the perfect butcher block. A former carpenter turned woodworker, he set up shop in Brooklyn and began crafting cutting boards and butcher blocks from solid American wood - walnut, maple, cherry. End grain assembly, where wood fibers run vertically, is his signature. It's the technique professional butchers have used for centuries: fibers part around the blade instead of being cut, preserving knife edge and allowing the wood to self-heal.

The work is impeccable. Boards are hand-finished, oiled with food-grade mineral oil, and each piece can be personalized with engraving. Wood scraps are composted, nothing goes to waste. Serious Eats, Bon Appétit, the New York Times recommend his blocks. The walnut end grain is sumptuous, quality is indisputable.

But the price of artisanal success hit hard. Nils works alone or nearly so, and demand has far outstripped his workshop's capacity. Lead times became catastrophic: months of waiting, unanswered emails, paid orders left in limbo. In 2024-2025, specialist forums testimonials multiplied. One customer waited since August, only receiving their board after threatening a chargeback. Another ordered in December, was ghosted after a January delivery promise. People close to Nils mention serious family emergencies, not a scam. But the result is the same for the customer: you pay and don't know when, or if, you'll receive your board. The product remains beautiful when it arrives. The buying experience is a gamble.
