History
The history of Cristel is a French industrial novel, the kind of story one would like to see in a movie.
It all began in 1806 with Frédéric Japy, a watchmaker who converted a mill into a factory in Fesches-le-Châtel, in the Doubs. Japy revolutionized metallurgy and produced the first stamped saucepan in France. The company prospered for nearly two centuries, with thousands of workers and an entire town living off the factory. Then came the decline. The 70s and 80s, globalization, Asian competition. The Japy factories closed. The story could have ended there.
In 1983, workers refused to accept fate. They restarted production illegally. Without authorization, without funding, using machines from the closed factory. They formed a worker cooperative. It was an act of industrial resistance, not a business plan. The cooperative manufactured stainless steel cookware and survived.
In 1987, Paul and Bernadette Dodane, a couple of entrepreneurs, mortgaged their house to take over the company. They had no money, but they had a conviction: world-class cookware could be manufactured in France, in Fesches-le-Châtel, with the same workers who had saved the factory.
The key innovation arrived in 1986: the removable handle. It is a patented system that changed everything. A Cristel pot can go from the stove to the oven to the table without ever changing containers. The handles clip on and off in a second. Storage is compact, and the pots are stackable. For small Parisian kitchens, it was a revolution.
The patent was a stroke of commercial and technical genius. Handles are sold separately (and are not cheap, a recurring criticism). But the system works so well that no one goes back. Once you've cooked with Cristel, fixed-handle pots seem prehistoric.
The stainless steel used is 18/10, with 18% chromium and 10% nickel, the same alloy as professional catering utensils. The base is multi-layered: stainless steel + aluminum + stainless steel, for uniform heat distribution. Compatible with all heat sources, including induction. Dishwasher safe, oven-proof up to 250°C, and grill-safe.
Manufacturing remains entirely in Fesches-le-Châtel. Stamping, polishing, assembly - everything is done on-site. The factory employs about 150 people. It is one of the last entirely French cookware manufacturers, as almost all competition has outsourced to China or Turkey.
The design has received several awards: IF Design Award, Red Dot. The line is sober, with no gaudy colors, no gimmicks, and no neon silicone ergonomic handles. Just metal and tempered glass for the lids. The Cristel aesthetic is that of a professional tool made for the home.
Prices are high: a 20cm saucepan costs 100 to 150€, and a complete set can reach 500-800€. This is double a De Buyer and triple a Tefal. But it is also the kind of cookware that is passed down, not thrown away after five years of peeling non-stick coating. An investment for 30 years, minimum.
Today, led by the second generation of Dodanes, the company exports to over 50 countries. The couple who mortgaged their house in 1987 built one of the crown jewels of the French tableware industry.
