Philosophy

Ets Sabatier Aîné & Perrier maintains a radical philosophy: forge everything on-site in Thiers, from initial heating to final polishing. No imported semi-finished products, no quality compromises. The Heritage and Idéal ranges showcase this Thiers craftsmanship transmitted over eight generations. In a market polluted by dozens of fake Asian 'Sabatiers' sold in supermarkets, K Sabatier defends authenticity through total traceability and EPV certification.

History

Before talking about K Sabatier, one must understand the trap. "Sabatier" is a generic name. Unprotected. Dozens of brands use it, most with no connection to the original family. The "Sabatier" knives found in supermarkets are Asian imports with a French name glued on. This is the most widespread scam in cutlery.

The real Sabatier is the one with a K in front. Philippe Sabatier settled around 1810 at 57 Route de Lyon, in Bellevue, a suburb of Thiers. Thiers has been the capital of French cutlery since the 15th century. The entire town lives by and for the knife. Philippe made knives for meat professionals, butchers and charcutiers.

In 1834, to distinguish himself from other Sabatier (those of Le Moutier, another branch without a direct connection), Philippe added a K in front of the name. This K has since been the sole marker of authenticity. Eight generations later, the company is called Ets Sabatier Aine & Perrier, the last direct descendants.

The philosophy is radical: everything is forged on site in Thiers, from the first heating to the final polishing. No imported semi-finished products, no foreign blades retouched in France to stick a "Made in France" label on them. Each blade bears the inscription "FRANCE Origin". The company holds the EPV (Entreprise du Patrimoine Vivant) label.

Five main ranges: l'Authentique (traditional, wooden handle), le Carbone (heritage carbon steel, rusts and patinas), le Proxus and l'Auvergne (modern), le Bellevue and l'Elegance (premium). The K Sabatier knife is not a designer object. It is a working tool, conceived by people who cut meat all day long, refined over eight generations.
