Philosophy
La Cornue is built upon a singular culinary obsession: the vaulted oven. By using a cast-iron arch to distribute heat through natural convection - without the need for fans - the brand ensures that moisture and flavor are perfectly preserved. Each range is a bespoke commission, hand-assembled to the owner’s specifications, bridging the gap between high-performance appliance and timeless decorative art.
History
Albert Dupuy was a man of scent and science. A Parisian herbalist and perfumer, Dupuy watched the arrival of natural gas in the capital in 1908 and saw an opportunity that would change the culinary world forever. Drawing from his experience with the distillation retorts (cornues) of the perfume industry, he envisioned a revolutionary oven. Instead of burning food from below, he built a vaulted cast-iron ceiling that circulated hot air around the ingredients - creating the world’s first natural convection oven. He named it La Cornue, a nod to both his origins and the gas refining process.
For three generations, the Dupuy family refined this craft in Saint-Ouen-l’Aumône, in the Val-d’Oise region. In the 1950s, André Dupuy launched the "Château" range, which remains the brand’s crown jewel: a hand-assembled sculpture of steel, copper, and brass. These are not mere household appliances; they are heirloom monuments, customizable in dozens of colors and costing as much as a luxury sedan. Star chefs and discerning collectors alike consider them the pinnacle of the kitchen. However, in 2015, after 107 years of family independence, the brand was acquired by the US-based Middleby Corporation for £129 million. While manufacturing remains in France for now, Middleby - which also owns Viking and AGA - is a NASDAQ-listed conglomerate frequently criticized for prioritizing margins over the legendary durability that once defined its acquisitions.
