History
Espalion, Aveyron, 1992. Christian Valat founds Laguiole en Aubrac in the heart of the knife's historic territory, Aubrac. The timing is key: in the 90s, the name 'Laguiole' is becoming a legal Wild West. Anyone can put 'Laguiole' on a knife made in Pakistan, China or Thiers. The name isn't an AOC.
Valat's answer: absolute transparency. Each knife is made entirely, from start to finish, by a single cutler. No chain, no division of labor. One man, one knife, from blade to spring. Each piece is signed and comes with a certificate of authenticity. Lifetime warranty.
The hand-chiseled bee on the spring (the 'mouche' in cutlery terms) is the Laguiole visual marker. At Laguiole en Aubrac, it's hand-sculpted, not molded, not stamped.
On BladeForums and specialist forums, the brand regularly appears in 'real vs fake Laguiole' threads. It's cited as a legitimate alternative to Forge de Laguiole (which has the EPV label and Starck design). Both are the real references, the rest of the market is polluted.
