Philosophy

Lluís and Carles Pallarès founded our workshop in 1917 with the ambition to create Catalonia's finest knives. Three generations later, we are the last guardians of a regional cutlery tradition. Each blade carries within it the Catalan soul and Iberian artisanal excellence.

History

Solsona, Catalonia, 1917. Brothers Lluis and Carles Pallares, blacksmiths, open a razor workshop. At the time, Solsona had several cutlers. Today, only one remains: Pallares.

Carbon steel, boxwood or olive handle, brass ferrule. A Catalan shepherd's knife at 8 euros that cuts like a scalpel. On enthusiasts: 'How is this so good for the price?' Carbon steel takes a patina, rusts if neglected, and develops an edge stainless can't reach.

Three generations, still in Solsona. Pallares is the Spanish Opinel - same philosophy of perfect simplicity, same refusal to offshore, same ability to produce an object worth ten times its price. The last cutler of Solsona.
